In sticking with our lower-carbohydrate theme we recently discovered the "Chaffle" and our family has been loving it! It’s simply a lower carb take on waffles that’s an excellent breakfast replacement without making you feel like you’re missing out on anything!
Ingredients
2 large eggs
2 tbsp almond flour
½ teaspoon baking powder
1 cup shredded mozzarella cheese
Pinch cinnamon
cooking spray
Directions
Mix egg, cinnamon, almond flour, and baking powder together in a bowl. Stir in mozzarella cheese; set batter aside.
Preheat a waffle iron or griddle.
Spray both sides of the preheated waffle iron with cooking spray or spray griddle well. Pour ¼ to ⅓ cup of the batter onto the waffle iron/griddle and spread it out from the center with a spoon.
Waffle: Close the waffle maker and cook until chaffle reaches your desired doneness, about 3 minutes. Carefully lift chaffle out of the waffle iron and repeat with remaining batter. Allow chaffles to cool and crisp up, about 2 to 3 minutes.
Pancake: cook on each side about 2 mins, checking center to ensure cooked all the way through. Should be slightly browned on both sides, repeat with remaining batter.
We’ve found that we prefer the ease of griddle cooking over waffle maker but we hope you give this recipe and try and love it as much as we have!
